Gorgeous Peach Salad

Description

Fresh cucumber, bitey shallots, cooling mint, and sweet fleshy peaches coming together in serious flavor harmony! I love this peach salad.


Ingredients

Scale
  • half an English cucumber, thinly sliced (about 1 cup)
  • half a shallot, thinly sliced (about 1/4 cup)
  • 2-3 teaspoons olive oil
  • 1 lime, juiced and zested (about 1 tablespoon juice, 1 teaspoon zest)
  • salt and pepper to taste
  • 2 peaches, pitted and sliced (about 2 cups)
  • mint leaves (about 2 packed tablespoons)
  • 2-3 teaspoons honey to finish (I like hot honey! Or you can do regular honey with red pepper flakes sprinkled on top, too.)

Instructions

  1. Mix Cucumbers and Shallots: Thinly slice your cucumbers and shallots (I like to use a mandoline – aff link). Toss the cucumbers and shallots with the lime juice, lime zest, olive oil, and a bit of salt and pepper. Let them sit for 10 minutes.
  2. Add Peaches and Mint: Add peaches, mint leaves, and a drizzle of hot honey.
  3. Toss: Toss everything gently together to combine. 
  4. Serve Immediately: To make it extra pretty, serve with extra mint leaves, honey, and salt and pepper on top! This salad should be eaten right away, and does not keep well as leftovers.

Notes

Yes, you can use nectarines – it’s great!

I don’t bother to peel the peaches. Long live the vibrant, colorful, fiber-rich peach peels!

If you don’t have a lime, I’ve made this with vinegar in place of the lime juice and it works great. You just need some kind of acidic element. I used white balsamic vinegar but apple cider vinegar or champagne vinegar would also work.
